1. I want to remove


"Search Our Store" "Basket image" and "View Basket"
That is on the header of every page

2. How do I change the default colours for the "Connect and Follow" icons for Facebook and Twitter in Top right of header

You'll find that in header.php in the theme.

For the images I would upload your own but using the same image name.
