Since running the lasted updater I'm getting this bit of code appearing in the middle of many if my reviews.

How do I fix that?

Sorry about that but while escaping the HTML in comments as a double security feature (tags etc are already stripped when comments are created) I inadvertently also escaped the "READ MORE" markup. There is a fix now in the incproddetail.asp file in the updater.

I've also noticed the updater has messed with the layout on the products page again, I had assumed that the site makeover I had done recently would fix things to prevent that from happening?

Is this the lasting touch site? If so, and the problem is that the products are now in 2 instead of 3 columns, in the style sheet...
style_products.css
...around line 46 you have...

padding: 0px !important;

-webkit-border-radius: 7px;
border-radius: 7px;
margin-bottom: 20px !important;
margin-right: 6px !important;
}

It's that "margin-right: 6px !important;" which is causing the problem. Just remove that.

I've removed that line, unfortunately it has made it worse!.

I'm seeing 3 columns squashed in where there should be only one on the mobile site. It has fixed the fact that only two columns were showing on my desktop version though, I now have three showing there which is how it should be.

Can you give it a look now and see if that's better for mobile. Remember if you are using iPhone you need to "Clear website history and browsing data" before you'll see the changes.
