Been using ECT for several years now. The following would be very helpful to me:

Custom user defined blank fields that only show in the products admin page. I would use these for the location of the product in my store and other notes about the product that I don't want my customers to see (Example, my cost, same as another sku, etc)

An ability to receive a low stock notification at a certain threshold I could set. I use ECT to manage my inventory and getting an email when something is almost sold out would make it easier for me to reorder it from the supplier.

Hi Phil, the first one, there have been 3 custom fields available in the product admin for a while now, but the latest (currently beta) release https://www.ecommercetemplates.com/support/topic.asp?TOPIC_ID=114584 now has the ability to add unlimited custom fields.
These do not have to be shown on the front end to customers. You can use them in the admin only, and give them a custom label.
