1. On a whim, I uploaded my kid's resume and a job posting to ChatGPT.
After a few rounds of tweaks, it came back with a resume that's much more concise and impressive. The same facts were there, but reworded to be focused on that job. The resume went from looking like a "decent" fit, to a "perfect" fit.
It also (eventually) generated a good cover letter after several rounds of edits.
So if you're helping a family member with a job hunt, AI might be useful.
2. I’ve also found AI might be useful for creating new web illustrations based on existing, possibly copyrighted images.
For example, a commercial customer had trouble hydrojetting the drain lines in an RV called a Keystone Montana. I wanted to share the info online but didn’t have a copyright-free image of the RV.
I uploaded some reference photos like this one:

And the AI produced this illustration, with a different viewpoint and perspective, potentially avoiding copyright issues:
