I'm not sure if I am completely missing it, or losing it all together , but where is the setting for changing the spacing between menu items?

Try something like this in the site style sheet...

.ectmegamenu > ul > li > ul.normal-sub > li a, div.ectmegamenu > ul > li > ul > li a, div.ectmegamenu > ul > li > ul > li > ul > li a {
padding: 20px 12px;
}
