What exactly should be posted to show in the "Event log"? Right now for me, the only thing logged is if I delete an image.

If you have PA-DSS (or whatever it's called ) turned on, you will see many events logged, but it also activates some features that might be undesirable such as logging you out of the admin constantly. (Just from my memory)
The other way to see entries there is if you need to do some debugging and you turn on event logging in the admin main settings - then you will see api send and receive data that can be helpful for troubleshooting.
